I made these muffins by tweaking a couple of recipes I found online. I used real pumpkin I pureed myself, used egg whites instead of eggs, subbed applesauce for the oil, and used whole wheat flour. They were really good. I have a batch in the oven now in which I cut the sugar in half, so if that works, I'll edit this to keep the reduced amount of sugar. Oops. I just realized that I also accidentally halved the egg whites in this batch, so that could be interesting. I'm also making about a half-batch with chia seeds to see how those turn out. The recipe as listed below has about 100 calories and less than one gram of fat per muffin:
Super Healthy Pumpkin Muffins:
1-3/4 c. pumpkin puree
1 c. applesauce
1 c. sugar
2 c. whole wheat flour
4 egg whites
1 t. baking soda
1-1/2 t. pumpkin pie spice
Mix it all up and bake in a 350 degree oven for 20 minutes. Makes about 18 muffins.
