Banana Nut Bran Muffins--Sugar Free, No Added Fat

These are a definite make-again.  Makes 12 muffins at approximately 112 calories and 3.5 grams of fat each.  The fat and calories can be reduced by leaving out the walnuts, but walnuts have healthy fat, so no big deal either way.

1 c. whole wheat flour
1 T. baking powder
1/2 t. cinnamon
1/2 t. nutmeg
2 c. bran flakes cereal
1/3 c. skim milk
1 c. ripe bananas (I used 3 bananas)
2 egg whites
1/4 c. applesauce
1/2 c. chopped walnuts

Mix well, spoon into muffin tins, and bake at 400 degrees for 20 minutes.

The original recipe calls all-purpose flour instead of whole wheat; 1/4 c. of sugar, which I omitted; and 1/4 c. butter instead of applesauce.  It also said to mix the ingredients separately, letting the bran flakes soak for two minutes in the milk/banana mixture.  Ain't nobody got time for that.
